Long Weekend Recap: Football, Doggie Play Dates, and Fajitas!

I hope everyone had a fabulous weekend and a great Labor Day!

I know I did! I got a lot done, did some gluten free baking (recipe to come!), and now I only have to face a four-day week. I’ll start with Friday….

Nick, Reed (who is one of our best friends from high school), and I headed out to a college football game.

It was really hot outside all weekend and definitely did not feel like fall. Thankfully it was a night game, so it cooled down pretty quickly.

The best part was that I got to bust out my cowboy boots again! I don’t know why I don’t wear them more.

On Saturday, we headed down to my parents and stopped by the local farmers market. My brother actually had a table set up to sell some of his homemade glass jewelry! They are pretty darn cool! There wasn’t a huge selection of fresh produce as this market was a bit smaller, but we did treat ourselves to a Steel City Pop popsicle.

The best part about visiting my parents is the dogs get to play and tire each other out! The will play like crazy, then be all sweet to each other. It’s pretty funny.

Sunday was a pretty chill day, but Monday, we did a ton! I’m going to break it into two posts.

Monday morning started with coffee of course. Nick presented me my coffee in a Christmas mug. It definitely tastes better that way =).

After my coffee, Peanut and I headed out for a nice long walk before it got too hot.

Before heading into the house, I went to go investigate these really pretty flowers/weeds(?) growing in our front yard. Any ideas on what they might be?

After our walk, Nick and I marinaded some chicken breasts and flank steak for fajitas. We used a combo of a recipe from the Pioneer Woman and our own tastes. We mixed chili powder, worcestershire sauce, a touch of cumin, lime juice, olive oil, 1 minced garlic clove, a teaspoon of sugar, and salt and pepper over two chicken breasts. We did something similar to the beef as well. We let it marinade for about 4 hours to really allow the marinade to sink in.

While the meat was cooking on the grill, I carmelized an onion and a red bell pepper in olive oil.

I love the smell of onions cooking. It makes the whole house smell delicious.

We let the chicken and beef rest while I finished grating cheese.

Nick is a master at grilling. The chicken turned out super moist and the marinade was amazing. We will definitely be using that one again.

I served my fajitas on corn tortillas, and heated up some organic, low-fat re-fried beans on the side. Definitely a delicious way to end the long weekend!

Sunday morning I baked some banana and banana-blueberry gluten free muffins. I will post that recipe tomorrow!
