Gluten Free Pumpkin Bread and a 2nd Liebster Award!!

It’s Monday again….

Did you all see the lunar eclipse last night? We actually had a pretty good view from our backyard. While I am definitely struggling with the fact that it’s Monday, I did have a really awesome weekend. Saturday and Sunday were packed with fall goodness.

I got my Rachel Ray EveryDay in the mail a few weeks ago and I finally had time to look through it! She is a fall fanatic so I always love her October issue. I also picked up the October Food Network Magazine on Saturday as well. Looking forward to adapting some recipes in both to make them gluten free!

I also decided it was time to dye my hair a little darker. It got pretty blonde on the ends over the summer, and I like to have darker brown hair for the fall months. I always use an ammonia-free option, like Clairol Natural Instincts.

I also did some fall baking on Sunday. I made yummy Pumpkin Bread!

I tried the King Arthur gluten free baking mix, and it worked really well! Their recipe can be found here, but I did some adaptions in my recipe below that worked out great!

First, I combined 3 eggs, 1 can of pure pumpkin, 1/2 cup canola oil, 3 tablespoons of honey, 1 cup of sugar, 1 teaspoon vanilla extract and spices into my Kitchenaid mixer until well blended. You could use a teaspoon of pumpkin pie spice, but I just made my own. 1 combined 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1/4 teaspoon ginger.

Once combined, I added in two cups of the King Arthur GF baking mix, and then blended until smooth. Now is when you can also customize your bread by adding nuts or chocolate chips.  I added in 1/2 cup chopped pecans.

Pour your mixture into a lightly greased (or cooking sprayed) bread pan, and let it rest for 10 minutes. You can also choose to sprinkle on some additional nuts on top or some sparkling sugar. Let it bake at 350 for 45 minutes. Then covered with foil and bake for an additional 20-30 minutes.

It makes a moist and fluffy bread perfect to have along with your morning cup of coffee!

Gluten Free Pumpkin Bread

  • Servings: 16

Ingredients:

  • 2 cups gluten free baking mix- like King Arthur (not regular flour)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon ginger
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup canola oil
  • 15 oz can of pumpkin (real pumpkin and not pie filling)
  • 3 large eggs
  • 3 tablespoons honey or molasses
  • nuts or chocolate chips (optional)

Instructions:

  • Preheat oven to 350 degrees and lightly grease a bread loaf pan.
  • Combine eggs, sugar, vanilla, spices, pumpkin, honey, and oil in a mixing bowl until well blended.
  • Add in two cups of baking mix, one cup at a time, until combined.
  • Pour batter into bread pan and let it rest for 10 minutes.
  • Bake for 45 minutes, then cover with foil, and bake for an additional 20-30 minutes until a toothpick inserted in the center comes out clean.
  • Let cool before removing from pan and enjoy!

What is your favorite season?

Easy…fall! If you haven’t figured this out by my blog by now, I love autumn and all it brings. I just need Dallas weather to get on board. 90 degree days all week =(.

How long have you been blogging?

I started blogging this summer in July as a creative outlet for me. I love it!

What blog post are you most proud of?

My Fresh Start for Fall post is one of my favorites. The idea of rejuvenating and refreshing your life always makes me inspired.

Name three accomplishments you have made in your life.

There are so many wonderful things in my life right now, but as far as personal accomplishments, I am really proud that I completed a Master’s Degree, that my husband Nick and I own our house, and I presented at a National Conference last year. Public speaking is definitely not one of my favorite things, so it felt great to have done that!

What is the worst beauty product you have ever used?

I once went and did a spray tan in one of those Mystic Tan booths. Worst experience ever. Now I stick to airbrush tans where a professional actually applies the tanner to you. No more orange knuckles for me!

Who or what inspires you?

My family and my co-workers. We are all so busy, but they help remind me what is really important!

What is your go-to hairstyle?

Air-dried straight from the shower. Not super adventurous, but I also like super easy hairstyles.

What is your biggest pet peeve?

People who don’t use their turn signal! I get a little bit of road rage every time this happens!

How often do you wear makeup each week?

Every day! I like to keep it simple, but I don’t feel dressed until I have mascara on. 

Favorite social media platform?

Does Pinterest count? I’m obsessed. I’m also a huge fan of Twitter. They are the first source I go to for news as it is happening.
