Prepping for a Successful Week

Happy Monday!

As happy as one can be on a Monday…

I spent Sunday prepping for the week so that there is little excuse not to eat well or work out each day. Meal prep and planning, laying out work out clothes, and prepping for morning smoothies all happened yesterday.

imageTo make sure I can whip up a healthy morning smoothie in no time, I do a few things to speed up the process:

  • I wash all my spinach as soon as I get it. It feels great knowing I got some veggies in at breakfast!
  • I freeze a bunch of banana halves that are overripe. No waste and then they are perfectly portioned out for me!
  • I don’t like to combine everything until the last minute so I lay out all of my measuring cups/spoons ahead of time.
  • This one above had 6 oz of Greek yogurt, 1/4 cup frozen berries, half a small banana frozen, 1 tablespoon flax seed meal, and a big cup of fresh baby spinach. Yum!

The end result is delicious! You would never know there was a full serving of veggies in here.

When I went grocery shopping yesterday, I stocked up on healthy snacks for the week. I love the Chobani flip banana. It has almonds and dark chocolate pieces. Perfect for a mid-afternoon snack!

For lunches I stocked up on items to make gluten free wraps. I place Boar’s Head turkey (all of Boar’s Head products are gluten free) in a Rudi’s gluten free tortilla. These tortillas are surprisingly healthy with 5 grams of fiber. I spread a wedge of Laughing Cow Cheese on the tortilla first, and it’s the best combo of cheesy and creamy!

I have tons of healthy dinners planned this week. Keep an eye out for some new recipes, including picadillo stuffed peppers and a lightened up tomato basil soup.

I’ll be heading out for a run right after work!
