The weather is chilly, the leaves are falling, and everyone is decorating for Christmas! I love this time of year.
Even though work has been CRAZY, I am trying to enjoy every minute I have at home, and really stay on top of working out.
It’s been hard with all of the delicious goodies this time of year. Check out my gluten free oatmeal cream pies! I’m making mini versions of them tonight for an office Christmas party this week!
With the colder, dark mornings, it’s been hard to motivate myself to get out there and exercise! One of the main reasons I’ve been trying to stay on top of it is my husband and I are heading to sunny Saint Lucia this weekend!!!!
I am beyond excited to escape the craziness around here, and spend some time on the beach.

The best part is everything at Sandals is all inclusive. They are said to have wonderful and safe options for those who have Celiac, so I can’t want to blog all about it when I return!
Since we will get back right before Christmas, I’m spending this week getting everything taken care of at work, wrapping (and finishing buying) all our gifts, and decorating the house! Even Peanut is festive!
I actually had the house decorated right after Thanksgiving. I wanted to be able to enjoy every moment of the lights. Fresh trees always smell so good, and it’s better for the environment than fake trees.
