Yesterday was really busy!
I’m still able to work from home on Thursdays, which is amazing, and I always seem to get a ton done. Before I got to work, I whipped up a quick batch of gluten free buttermilk biscuits. It seriously is such an easy recipe it only took me 15 minutes to make them! I used the GF Jules recipe, which I have found to be the best biscuit recipe so far, and I love her flour. I’m a southern girl, so I know a good biscuit when I see one!
The key to her biscuit recipe and what give the gluten free flour a bit more body is using powdered buttermilk instead of liquid. Sounds strange, I know, but it works like a charm!
Since GF baked goods often have a harder time browning up in the oven, she also suggests brushing the tops of the biscuits with milk or butter before placing in the oven.
I still think the tops don’t brown as well, but the end result is flaky and buttery, so I can’t really complain!
I topped mine with bacon, egg, and cheese, because I can, but honey and butter are always a safe bet! Check our the GF Jules Website for deals on ordering her flour or for a ton of recipes!
After working through the morning hours, I took and break and headed to the dog park with Peanut.
It was over 100 degree outside so we only lasted about 10-15 minutes, but he had a blast!

On a completely random note, I’ve also started reading Wild, written by Cheryl Strayed. Have any of your read it? I’d love to know how the movie compares. I’m so immersed in the book that I’m have trouble putting it down! It’s giving me an itch to go backpacking…..maybe =).
