How was your weekend?
Mine was filled with delicious food, and a sad amount of exercise besides walks with Peanut. Today, I’m getting back on track, but I wanted to share all the delicious eats from over the weekend.
First, the good…
I was looking for a healthier sweet treat on Sunday and finally tried the Outshine Simply Yogurt Bars. The have only 90 calories per bar, and the peach was perfect for the warming weather.
The bad (and the delicious)…
And by bad, I mean amazing (just not good for you).
I was watching Pioneer Woman the other day (yep, my first mistake) and she was making these amazing looking sausage and cheese biscuit breakfast sandwiches.
If you haven’t tried making your own gluten free biscuits yet, don’t wait any longer! It is really not as complicated as it seems. I love the GF Jules recipe that I have tried in the past. While the biscuits were baking, Nick formed some sausage patties from fresh ground sausage we bought at Central Market, and I cut up some sharp cheddar cheese.
While the biscuit was still warm, we piled everything on so the cheese started to melt. It was heaven. Definitely not helping the diet goals, but hey, it was worth it! * A tip about gluten free biscuit making: make sure your baking powder and baking soda are fresh! This is how you can ensure fluffy biscuits each time.
Now to get back on track!
I ventured out this morning for a walk with Peanut. It was chilly out, but the sun was shining and I can tell it’s going to be a beautiful day!
For breakfast, I fueled up with a healthy blueberry, spinach, and mango smoothie. I combined one Chobani 100, 1/4 cup frozen blueberries, 1/4 cup frozen mangos, 1/2 of an extra-small banana frozen, and 1 big cup of spinach.
Healthy and filling with 226 calories, 14 grams of protein, and 10 grams of fiber!
