I hope everyone had a wonderful Thanksgiving day filled with food and family. I was lucky to be able to share the day with both my family and Nick’s and my parents house.
We started cooking on Wednesday morning. I baked my pies and Nick made his spicy cream corn. I made my gluten free Pumpkin Pies and tried a new recipe, Gluten Free Chocolate Bourbon Pecan Pie. I had never made a pecan pie before but everyone said it turned out really well!
I used a store bought crust for this recipe since I was already busy making crust from scratch for the pumpkin pies. Whole Foods has a really great tasting gluten free crust that freezes well so you can pull it out whenever you need it! Fair warning, this recipe calls for a ridiculous amount of sugar, but I guess if not at Thanksgiving, when? I adapted this recipe from Pioneer Woman.
I mixed brown sugar, white sugar, light corn syrup, eggs, melted butter, and vanilla in a bowl.
Then I added some chopped pecans grown in Texas. Most recipes call for whole pecans but I found that the chopped suggestion given in this recipe made it so much tastier to eat. No one wants to chew through a whole pecan every two seconds.
Now for the best two ingredients! Three tablespoons of Jack Daniels and 1/4 cup semi-sweet chocolate morsels. Add the chocolate and pecans together on the bottom of the pie crust, then pour over the sugar mixture.
The pecans will start to rise to the top. Bake at 350 f0r 50 minutes or until it’s only slightly giggly.
The filling was rich and gooey and the chocolate cut through some of the super sugary filling. I served it with bourbon vanilla whipped cream! Yum!
We had quite the food spread. Everyone brought their signature dishes. We had cheesy mashed potatoes, sweet potatoes, fennel potato gratin , green beans, broccoli rice casserole, stuffing, ham, Nick’s creamed corn, and of course turkey!
The green bean casserole was a dud. Definitely didn’t turn out how we wanted so we will have to try something different next year!
I did NOT venture out on black Friday, but Nick and I picked up our Christmas Tree yesterday from Lowes. They have awesome fresh trees for a really good price.
We will be spending our Sunday decorating the house and getting in the Holiday spirit!

Gluten Free Chocolate Bourbon Pecan Pie
Ingredients:
- Unbaked gluten free pie crust (try Whole Foods)
- 1 cup white sugar
- 3 tablespoons brown sugar
- 1/2 teaspoons salt
- 3/4 cup light corn syrup
- 3/4 teaspoon vanilla
- 1/3 cup melted and cooled butter, salted
- 3 eggs, beaten
- 1 cup chopped pecans
- 1/4 cup semi-sweet chocolate morsels
- 3 tablespoons bourbon
Instructions:
- Preheat oven to 35o degrees.
- Mix sugars, corn syrup, salt, vanilla, butter, eggs, and bourbon in a large bowl until smooth.
- Layer pecans and chocolate chips on the bottom of the pie shell.
- Pour sugar mixture on top and bake for 50 minutes.
- You may need to bake longer. Pie should be just slightly jiggly. Mine took closer to 65 minutes. Just watch the crust so it doesn’t burn.
- Allow to cool for several hours and serve with whipped cream.
