Weekend Recap: Farmer’s Market, Meal Prep, and Organizing Part 2!

 

I had off work this past Friday. My only plans were to mow the lawn, maybe do some cleaning, and relax. It started pouring about 9am, right as I had just finished mowing the front yard. I gave in to not mowing the back in the rain and came inside.

I quickly showered and poured myself a BIG cup of coffee. Peanut did not want me sleeping in on my day off, so we were up early. While I waited for the rain to subside, I sat down to look through my new copy of Heath magazine.

 

Peanut was less excited about the down time….

 

After finishing mowing the backyard, working out, and showering for the second time, I made myself a smoothie with pineapple, coconut protein powder, and spinach. Yum!

I continued on my quest to get an organized home before fall, I worked on one of the most neglected areas of my kitchen, my pantry. I cleared out the expired food, empty spice cans, and organized everything in a place that makes sense. Now it will be easier to find everything and use what food we have! No more buying spices we already have stashed at home.

I also organized all of my baking products and smoothie ingredients on one pull out shelf to make morning smoothies or protein baked goods easier to whip up!

After finishing, I made myself a chocolate cherry protein smoothie. It had chocolate protein powder, frozen cherries, spinach, half a banana, and a tablespoon of raw cacao nibs. It was so amazing.

Saturday morning Nick and I headed to our local farmers market to check out the produce before heading for our bigger shop at the regular store. We grabbed chili peppers, heirloom cherry tomatoes, and these gorgeous peaches above.

After heading out for a walk with Peanut, we snuggled on the couch while I planned my meal prep for Sunday. I browsed the soup section of a Pioneer Woman cookbook, and decided on a simple black bean soup for lunches. Actually, I cooked it longer so it was more like just black beans.

It was such a simple recipe. After soaking dried black beans overnight, I added diced onion, bell pepper, chicken broth, and spices and let it simmer for a few hours. I definitely think I will add more spice next time, and maybe some chopped jalapeno, but these would be really good mixed with quinoa, grilled chicken, and avocado!

I was up early Monday morning to start the week off right with a long run! I stopped off at Starbucks on my way to work to give me extra motivation to be productive! Sometimes it’s a real struggle on Mondays.
