Gluten Free Pumpkin Protein Doughnuts & Muffins!

Ok, I know it’s July, but I’m already itching for my favorite season to arrive.

Since I’ll probably have to wait 3 more months for cooler temps to arrive, I decided to bust out some pumpkin goodies that are both yummy, but also really healthy.

 

Pumpkin is a great source of fiber and vitamins. Something about pumpkin and coffee are just so perfect together. Knowing that they also fit into my daily healthy eating plan makes them that much better!

I ordered my doughnut pan off of Amazon! I was so excited to use it when it arrived. There is no flour or butter in these donuts, and only a tablespoon of sugar for the whole recipe. Both the doughnut and muffin recipes were adapted from ToneItUp! Nothing smells quite like fall than a house filled with pumpkin and spices baking!

I mix the dry and wet ingredients separately, then combined in a big mixing bowl. Protein powder, almond flour, and baking powder give these doughnuts body.

I sprayed 5 of the doughnut molds with cooking spray so they wouldn’t stick, then spooned the dough into the molds. I then used a knife to spread the dough around. It will be more of a cookie-dough consistence.

Baked for 8 minutes, these come out looking just like the real thing!

I had to enjoy one right away they smelled so good!

I also made these mini pumpkin muffins. Yes! Both recipes below =). Get baking!

GF Pumpkin Protein Donuts!

  • Servings: 5
  • Difficulty: easy

Ingredients:

  • 2 scoops vanilla protein powder *I used Perfect Fit.
  • 1/4 cup almond meal
  • 1 tablespoon coconut sugar or regular sugar
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp nutmeg
  • 1 tbsp coconut oil, melted
  • 1/4 cup pumpkin (the real stuff, not pumpkin pie filling)
  • 3 tbsp almond milk
  • 1 egg white

Instructions:

  • Preheat oven to 350 degrees
  • spray 5 of the doughnut molds with cooking spray.
  • In a mixing bowl, combine egg white, almond milk, pumpkin, and coconut oil
  • In a separate bowl, mix protein powder, almond flour, baking powder, sugar, and spices.
  • Combine dry ingredients into wet, and stir until fully combined.
  • Pour batter into 5 of the doughnut molds, using a knife to press batter evenly into the molds.
  • Bake for 8 minutes or until a toothpick inserted comes out clean.
  • Serve warm or room temp.
  • Enjoy =)

GF Pumpkin Protein Muffins!

  • Servings: 6
  • Difficulty: easy

Ingredients:

  • 1/2 cup vanilla protein powder *I used Perfect Fit.
  • 1/2 cup almond meal
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp nutmeg
  • 1 tbsp honey
  • 1/2 cup pumpkin (the real stuff, not pumpkin pie filling)
  • 1 tsp vanilla extract
  • 2 eggs

Instructions:

  • Preheat oven to 350 degrees
  • spray muffin pan with cooking spray or use cupcake lines.
  • In a mixing bowl, combine eggs, vanilla, pumpkin, and honey.
  • In a separate bowl, mix protein powder, almond flour, baking powder, and spices.
  • Combine dry ingredients into wet, and stir until fully combined.
  • Pour batter into 6 muffin tins or 18 mini muffin tins (3 mini muffins per serving).
  • Bake for 15 minutes or until a toothpick inserted comes out clean.
  • Serve warm or room temp.
  • Enjoy =)

 

Best of all, both the muffins and doughnuts freeze really well, so you can make a bunch and then bring them out when you need a quick and easy breakfast or snack!
