Yay Friday!
This has been one very long week. I’m looking forward to an easy weekend spent with family and enjoying the gorgeous weather here! By Tuesday of this week, I had a killer sweet tooth and needed something I could whip up quickly.
I’m all about copycat recipes now. I love to find a good recipe and then make it gluten free so everyone can enjoy it! I came across this blondie recipe from fellow blogger Can’t Stay out of the Kitchen. It was super easy to whip up, and since I am not a huge chocolate person, this was a perfect gooey warm substitute for brownies.
I mixed all ingredients in a big bowl, spread the batter out into a pan, and topped with sprinkles before baking.
I took them out after 25 minutes, when the edges were just starting to turn golden brown and a toothpick came out clean.
The white chocolate chips made these so freaking delicious. I had to take some to my coworkers on Wednesday so I wouldn’t eat them all. Stop judging me…

While these were cooling, Peanut and I headed out for a nice long walk. It was in the mid-60’s and perfect for a longer stroll. A neighbor was burning wood a couple streets over and the smell was wonderful. Cool air with burning wood always gets me excited for the upcoming holidays.
I picked up some goodies from Bath & Body Works. The Honey Crisp Apple scent is one of my absolute favorites. I love to burn this one in the morning when I can open the windows and let in the fresh air. I will be pulling out all the fall/Halloween decorations this weekend!

Gluten Free Cake Batter Blondies!
Ingredients:
- 1 package gluten free confetti cake mix (I use Pillsbury)
- 1/4 cup canola oil
- 1 egg
- 1/2 cup half and half
- 1/2 cup white chocolate chips
- sprinkles for topping
Instructions:
- Preheat oven to 350 degrees
- Combine cake mix, oil, and egg, until blended.
- Add in half and half and white chocolate chips until smooth.
- Spread batter evenly in a greased baking dish.
- Bake for 20-30 minutes until toothpick comes out clean and edges are light brown.
- Allow to cool before cutting into squares.
- Share with friends!
