Hi Everyone!
I’m in a great mood because in just a couple days I will be heading to Denver for a last minute decision trip. Nick’s 30th birthday is coming up and we wanted to do something special. We were also ready to get out of the Texas heat. It has somehow crept back up close to 90, ugh!
But before all that, I wanted to recap my adventures from this past weekend. On Saturday Nick and I ventured to the Lake Highlands Octoberfest. This is near our home and is in a really pretty park so we thought it was worth checking out. They had a live band, local food and beers, and a ton of family friendly activities.
We didn’t end up staying too long, but I did grab a couple of my favorite hard ciders right now, Bishop Cider Crackberry. The name is funny, but the drink is delicious! It’s not as sweet as other ciders I have had, which I really like. Plus it’s a pretty purple color! Bishop Cider Co is a local cidery in Dallas. I love supporting local brands!
I’ve signed up to take part in the Tone It Up 31 Day October Challenge! It’s been a while since I did the Summer Bikini Challenge so I was really ready for this! October is the perfect month to eat clean, workout daily, and get into good habits before Halloween candy, Thanksgiving overload, and Christmas treats come into the picture.
After grabbing a latte from Cultivar Coffee on Sunday, I got busy meal prepping to get ready. I made kale salads, grilled chicken, made mini muffin frittatas, and baked up a batch of these delicious pumpkin oat muffins!
It’s a Tone It Up recipe, and you can have 2 per serving. I loved that the recipe didn’t call for any refined sugars and instead used unsweetened apple sauce and maple syrup for some sweetness. I subbed in honey for the maple syrup because that is what I had on hand. They turned out great! You can find similar recipes on their website here.
